Well if you need infinite time in Ultimate Match, can't you simply disable the timer in the options menu?

I'm normally not one for cheating, but have been playing these games a long time and the challenges that have to be beaten to unlock most of the features are pretty much impossible unless you are competition level. CodeTwink has most CodeBreaker codes for KOF games, but sadly these later ones are not apparently anywhere.
