Re: Best keyboard-only games
Also, if you like FPS games, a lot of the early 90s ones were designed for keyboard input sans mouse (or made the mouse totally optional). I'm talking games like Wolfenstein 3D & Spear of Destiny, Heretic, Hexen 1 & 2, Strife, Doom 1 &2, Duke Nukem 3D, Cybermage: Darklight Awakening, Catacomb 3D, Blake Stone, and plenty of others I'm forgetting about:

I play FFXI entirely with the keyboard, but I also don't like the compact layout...so...
May seem odd, but the Trackmania games are built for digital input rather than a wheel, and are pretty much made for keyboard-only play.

re-read the OP, homey.
Derp. In that case I meant to say... Typing of the Dead Overkill!
Re: Best keyboard-only games
This game always felt so natural to me using a keyboard only (compared to a controller). It's the kind of game that after you beat it the first time, you can fly through it again and again. It's not very long, you can beat it in one ~30 minute sitting. But it's the kind of game that you don't mind plaything through again and again, or at the very least least, from time to time.
Also, the 20th Anniversary Edition is $10 on Steam or GoG. Can't go wrong.

Back in the mid 90's, I use to play a lot of Doom using the keyboard only. These days, I don't know how I ever did it. Well, I do know actually, I was horrible. At this point, I couldn't imagine ever playing Doom again without the mouse!
