There was an informative thread on Atari Age a few months back. It began as a debate as Windows v MAC v Pi v Linux but surprisingly was an interesting read rather than fanboys. For emulation the PC side was hands down the unanimous choice for ease of setup and compatibly with the most emua. I was very surprised to see OS X had moved forward quite a bit though hearing from Mac users. You might have some luck there.
I don't have an answer for you, but I know when my current MS 7 emu box (saved from work, now connected to my TV) dies or loses support in 2020, I'll be buying another $300 machine (including Windows 10) from PC liquidation specifically for emulation unless Pi comes a long way for the 32/64 bit era in the time.

I worked at PC repair shop in college and we were a certified apple house as well... haven't touched a Mac since graduation because of that experience
