What is the difference between Fatal Frame Xbox and PS2?

Did they go back and retouched the graphics by adding more polygons? How does this play on the 360?

The Xbox version had tweaked graphics, new costumes and ghosts, and Fatal Mode. It does work on the 360, though no idea if that changes anything.

The usual upgrade from PS2 to Xbox to my knowledge. Fewer jagged edges and less muddy. I hear the Xbox version has a worse framerate but also offers better sound quality and is generally cheaper.

There's also a remake on the Wii, if you're willing to import and are able run on your Wii.
