McKids and Tiny Toon Adventures on NES are freaking amazing.

Tiny Toon Adventures: Buster's Hidden Treasure for the Genesis is also good. Alladin, Quackshot, and Castle of Illusion also great for the Genesis as mentioned.

I used to think that was tough, but after playing it pretty recently, it was relatively easy. I like the SNES version of Aladdin a lot more, honestly!

Donkey Kong Country feels like the most glaringly obvious answer.

Yeah, the difficulty spike in DKC2 and DKC3 is pretty big, the original is a cake walk in comparison.
