Pacman World is full 3D, although it's pretty linear like a classic 2D game. If you like pacman world you might like Bomberman Hero for N64.

Sonic Colors is about 60% 2D 40% 3D so I don't know if I'd count that either.

Sort of, but the 2D portions are 2.5D, not just 2D (launching into the background, etc.), and the 3D sections are so linear as to be trivial.

I think theres a 2.5d pandemonium game on the NGage too, if thats your thing

If people are counting viewtiful joe as a platformer (which it really isnt) here too, you can probably go and add Super Smash Bros Brawl. The 1 or 2 player subspace emissary is a sidescrolling beat-em-up with platforming elements. Hell, the main game is half fighting, half platforming too really.

There's also a Nights game on Wii, I assume that is also 2.5D, but i dont know for sure.

It's 2.5D to whatever degree the original is. NiGHTS is a weird case either way though. You switch between full 3D platforming and 2.5D non-platforming depending on whether you are controlling one of the kids or NiGHTS. There's never actually any 2.5D platforming going on. I'm not sure how NiGHTS counts and Sonic Colors doesn't...
