Nominate The Best Fan-Service Games
I thought this would be a fun topic and maybe we will do a full write-up on the topic (if you want to volunteer, let me know)
But lets share our thoughts on what we all think are the best fan-service games are...
Examples would be:
Super Smash Bros. series
Capcom Vs series
Sega Super Star Tennis
And don't just focus on the fact that "oh the game has a lot of characters in it" -- also think about things like level designs and easter eggs that really are rewarding for fans of a certain company, franchise, etc.

A couple that I own that have great fan service are sonic and sega all star racing and Jump Super Stars. I own All Stars racing for wii and it has solid controls(classic controller compatibility ) and has well designed tracks from Alex Kidd to Super Monkey Ball. I don't own Jump Ultimate Stars so I can't say anything about that, but Super Stars is a solid 2d fighter with a brawl style gameplay.

The Gundam VS series are fan-service to the max.
Arcade modes
Story Modes for each character
Alternate Story Modes and What-If? Campaigns
An average of over 40 different robots
The ability to play the villains
Unlockable music, mobile suit designs, artwork, etc
Eventual inclusion of 30 years worth of Gundam material (from 1978 all the way to Unicorn)
True, not a lot of them have made it out of Japan but even Gundam vs Zeta Gundam offered me about 100 hours of gameplay to unlock everything.

Anyway, you should mention Dissidia, or Ehrgeiz for that matter. Soul Caliber probably wouldn't be a bad mention for it's platform specific characters, like Link or Darth Vader.

In that vein, Final Fantasy Tactics you could unlock Cloud.

I think that Team Fortress could fit into this category with the updates and such.
Some others would have to be the really well put together compilations: Sonic, Megaman, etc.
