The lag was really noticable in the video.

Your production quality is excellent. This video looks very professional. I can tell that a lot of time went into editing.
I especially liked the shot where you placed the camera behind the joystick with the TV screen in the background. This showed the input lag better than any other video on the subject.
The stop-motion animation at the end was lots of fun. I know how time-consuming that can be.
