Alright everyone.. after about a year of collecting, I've finally decided to just play my games already! Obviously, I'm looking to start a new RPG. I have a fairly large collection (IMO at least) and, admittedly, little experience. So, I need your help deciding which one I should play next.

A little info on my RPG experience..
- I've only played Final Fantasy VII, VIII, and XII. (Like I said, I have little experience .) If I had to rank them, I'd go VIII > XII > VII. I loved playing them all, but VIII got painfully boring towards the end, XII got a little confusing, and VII was just alright. Yet, I hated that VII and VIII made me feel like an emo kid at times. I stopped playing VIII for a few days after that part where Squall and Rinoa were floating in space. That really made me cringe.
- I started X and played up to Kilika, but just couldn't find it in me to continue playing. I guess I wasn't all that interested in the story.
- I've played both Star Wars KotOR games a few times. I can't really compare those to the FF games for a few reasons.. but overall, I would say I enjoyed them more.
Anyways.. I hope that helps identify where my interests are. Any suggestions are greatly appreciated, even if they're not on my list (but please confine them to the systems I have). Something like a top and bottom 3 would be awesome. Thanks in advance!

Play Chrono Trigger. It has an easy-to-learn combat system and isn't too difficult, the plot's not overly long, and you'll probably enjoy the artwork and music along the way. Plus it'll check off another of those "classics" that you have.

Dragon Quest 8 can be great for you, it has easy/basic mechanics but they are perfectly made.
Then maybe Parasite Eve, or one of the Suikoden games.
I don't recommend getting into FF Tactics, or DQ VII. One is little bit broken and had complex battle system, another is to long.(DQ 7 is 150 hours+ game)
And you definitely need to play Chrono Trigger !

Since you say you like KoTOR, and have played through them multiple times, you may want to look more into other Bioware games. I think you've only got Jade Empire on your buy list, but the Mass Effect series and Dragon Age would be thing to consider as well I think.
On a basic level, there are things that most all Bioware RPGs tend to do. Giving you choices between a couple paths (light/dark side, paragon/renegade, open palm/closed fist, etc), party loyalty quests, and so on.
Combat is a bit different in each. Jade Empire is something of a beat 'em up, Mass Effect more or less a cover shooter, and Dragon Age more of a continued development of the Neverwinter Nights style, which in turn was kind of moving the Infinity Engine to 3D.
I would say to consider picking up the Mass Effect Trilogy pack, since it's the closest to KoTOR.

Honestly, I've always been a little turned off by Mass Effect because it's a shooter. But I haven't tried it, and since you say it's close to KotOR, I'll give it a try.
I also didn't know Jade Empire was something of a beat 'em up.. good to know. Thanks! I'll look into Dragon Age as well.

Sure thing. Just definitely play them in order. I think it makes for a better experience with Chrono Cross to have played Chrono Trigger before it, particularly when stuff starts getting weird.
